Grandma's Rice Koofteh

The only style of rice koofteh I've ever eaten my whole life — a recipe from my paternal grandmother, whose cooking was one of a kind.

  • 3 cups rice
  • 500 g ground meat
  • dried fresh herbs (tarragon, savory, chives, dill, parsley, coriander, mint, fennel)
  • 2 tbsp chickpea flour
  • turmeric and cinnamon
  • salt
  • oil
  • water
  • 1 egg
  • 2 medium grated onion

Method
 

  1. Steam the rice with the dried herbs. Once the rice has cooled, mix in the ground meat combined with grated onion, along with turmeric, salt, cinnamon, and 2 tablespoons of oil, and massage thoroughly.
  2. Then add the egg and chickpea flour and massage again.
  3. After kneading, take small portions of the mixture and shape into balls, filling the center with fried onion, raisins, and prunes.
  4. Heat water, oil, and turmeric in a pan, and once hot, add the koofteh balls.
