Migmom Festive Apple Cake

Cinnamon, crunchy sliced almonds, and warm apple — the cake I made for Maman Khanom's guests that everyone kept asking for.

  • 125 g butter
  • 150 g sugar
  • 2 eggs
  • 1/3 cup (80 ml) milk
  • 150 g flour
  • 1 tsp baking powder
  • 1 grated apple
  • 50 g almonds
  • sugar, for the topping mixture
  • cinnamon, for the topping mixture
  • powdered sugar, for garnish

Method
 

  1. Choose a pan large enough for the batter, and either grease and flour it or line it with parchment paper.
  2. Beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition until fully combined.
  3. Mix the flour with the baking powder, and add it along with the milk to the batter in two additions. Once fully combined, pour the batter into the pan and smooth the top.
  4. Mix the sliced almonds, grated apple, cinnamon, and extra sugar together, and scatter over the cake.
  5. Bake in a preheated 180°C oven for 45 minutes to an hour depending on your pan. After 45 minutes, insert a knife into the edge of the cake; if it comes out clean, the cake is done, but if any batter sticks to it, give it a few more minutes.
  6. Remove the cake from the oven, and after it cools for 5 minutes, take it out of the pan. If using paper liners, there's no need to grease the pan first, and you can keep the cake in the liner until ready to serve.
