Simple & Quick Raisin Cookies

A simple, low-calorie sweet that takes about an hour — and disappears twice as fast.

  • 3 eggs
  • 200 g sugar
  • 200 g vegetable oil (more oil = crispier cookie)
  • 70 g raisins
  • 1/8 tsp baking powder
  • 250-270 g flour (more flour = softer, koloocheh-like cookie)
  • 1/8 tsp vanilla

Method
 

  1. Beat the sugar and eggs together until you get a pale, creamy mixture. Then add the rest of the ingredients in order — you don't need to beat too long once you add the raisins and flour; just until the mixture is smooth.
  2. Pour the batter into a piping bag and pipe small rounds, spaced slightly apart, onto parchment paper on a baking sheet. You can also scatter a few extra raisins on top of each cookie for a nicer look.
  3. Preheat the oven for 10 minutes before baking to 200-220°C (390-430°F), and bake for 7-12 minutes depending on the size of the cookies, until the bottoms turn golden.
