Beat the sugar and eggs together until you get a pale, creamy mixture. Then add the rest of the ingredients in order — you don't need to beat too long once you add the raisins and flour; just until the mixture is smooth.
Pour the batter into a piping bag and pipe small rounds, spaced slightly apart, onto parchment paper on a baking sheet. You can also scatter a few extra raisins on top of each cookie for a nicer look.
Preheat the oven for 10 minutes before baking to 200-220°C (390-430°F), and bake for 7-12 minutes depending on the size of the cookies, until the bottoms turn golden.
