Sister-in-Law's Bamieh Stew (Okra Stew)

A version of okra stew that's neither slimy nor stringy — it completely changed my mind about this dish.

  • fried onion
  • chopped garlic
  • turmeric
  • coarsely chopped meat
  • chopped okra
  • salt and pepper

Method
 

  1. Chop the onion and garlic (garlic is used generously in this dish) and fry with turmeric and a little salt. Then lightly fry the tomato paste, add the meat, and let it cook with a little water.
  2. Meanwhile, wash and chop the okra and fry it separately in a different pan (the trick in this recipe is frying the okra separately from everything else) with a little oil, some chopped garlic, and a bit of tomato paste.
  3. In the final stage of cooking the meat, add the okra along with salt and pepper, and let the stew come together. Just be careful — if the okra cooks too long it will fall apart.
