This is the banana bread I make whenever there are a few too-ripe bananas sitting on the counter — deeply spiced, a little sweet, and it never lasts more than a day in our house.

The trick is not to overmix once the flour goes in — that’s what keeps the crumb soft instead of dense. A handful of walnuts or chocolate chips folded in is never a bad idea.

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup plain Greek yogurt
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. In a large mixing bowl, mash the bananas until smooth. Add the eggs, melted butter, brown sugar, vanilla extract, and Greek yogurt, and whisk until well combined.
  3. In a separate bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually fold the dry ingredients into the wet ingredients until just combined — avoid overmixing.
  4. If desired, fold in the walnuts or chocolate chips.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55–65 minutes, until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

این نان موزی رو هر وقت چندتا موز رسیده روی کانتر جا مونده باشه درست می‌کنم؛ خوش‌عطر، کمی شیرین و همیشه توی خونه‌مون یک روزه تموم می‌شه.

نکته‌ش اینه که بعد از اضافه‌کردن آرد زیاد هم نزنید؛ همین باعث می‌شه بافتش نرم بمونه نه سفت. کمی گردو یا چیپس شکلاتی روی رویه هم همیشه ایده خوبیه.

  • ۳ عدد موز رسیده، له‌شده
  • ۲ عدد تخم‌مرغ درشت
  • ۱/۲ پیمانه کره بدون‌نمک، آب‌شده
  • ۳/۴ پیمانه شکر قهوه‌ای
  • ۱ قاشق چای‌خوری عصاره وانیل
  • ۱/۴ پیمانه ماست یونانی ساده
  • ۱ ۱/۲ پیمانه آرد همه‌کاره
  • ۱ قاشق چای‌خوری جوش شیرین
  • ۱/۲ قاشق چای‌خوری نمک
  • ۱/۲ قاشق چای‌خوری دارچین
  • ۱/۴ قاشق چای‌خوری جوز هندی (اختیاری)
  • ۱/۲ پیمانه گردوی خردشده یا چیپس شکلاتی (اختیاری)

Method
 

  1. فر را روی ۱۷۵ درجه سانتی‌گراد (۳۵۰ فارنهایت) از قبل گرم کنید. یک قالب کیک به ابعاد تقریبی ۲۳×۱۳ سانتی‌متر را چرب کرده و کف آن را با کاغذ روغنی بپوشانید.
  2. در یک کاسه بزرگ، موزها را له کنید تا نرم شود. تخم‌مرغ‌ها، کره آب‌شده، شکر قهوه‌ای، عصاره وانیل و ماست یونانی را اضافه کرده و خوب هم بزنید تا کاملاً یکدست شود.
  3. در کاسه‌ای جداگانه، آرد، جوش شیرین، نمک، دارچین و جوز هندی را الک کنید. کم‌کم مواد خشک را به مواد مرطوب اضافه کرده و فقط تا حد مخلوط‌شدن هم بزنید؛ از هم‌زدن زیاد خودداری کنید.
  4. در صورت تمایل، گردوی خردشده یا چیپس شکلاتی را اضافه کنید.
  5. خمیر را داخل قالب آماده‌شده بریزید و رویش را صاف کنید.
  6. به مدت ۵۵ تا ۶۵ دقیقه بپزید تا وقتی خلال دندانی که در وسط آن فرو می‌کنید، تمیز بیرون بیاید.
  7. اجازه دهید نان به مدت ۱۰ دقیقه داخل قالب خنک شود، سپس آن را روی توری خنک‌کننده بگذارید تا کاملاً خنک شود و بعد برش بزنید.
