Migmom Yalda Cake (Christmas Tree Cake)

A cake for the night we celebrate Yalda beside a Christmas tree — keeping old traditions alive while building new ones.

Ingredients
  

For the cake
  • 185 g softened butter
  • 125 g sugar
  • 3 eggs
  • 240 g flour
  • 1/2 tsp baking powder
  • 1/2 cup milk, heaping
  • 1/4 tsp vanilla
  • dried fruit and nuts (chopped dried apricots, chopped walnuts, golden and green raisins, cranberries)
For the syrup
  • 2 tbsp honey
  • 1/3 cup rosewater mixed with water
  • cinnamon stick and cloves, optional

Method
 

  1. Preheat the oven to 180°C.
  2. Line your pan with parchment paper. Beat the butter and sugar with an electric mixer until combined. Add the eggs one at a time, mixing well after each addition.
  3. Add half the flour, baking powder, and vanilla along with half the milk, and once combined, add the remaining flour and milk, mixing just until combined.
  4. Fold in the dried fruit and nuts by hand, without the electric mixer. Pour into the pan and bake for 45 minutes to an hour depending on the size of your pan.
  5. Meanwhile, mix the syrup ingredients together and heat until it reaches the right consistency. Toss the dried fruit and nuts you're using for decoration into the thickened syrup, and once the cake is out of the oven and cooled, decorate the top with this mixture.
