Zeytoon Parvardeh brings back good memories of the north. Northern Iran, especially the Rostamrud area, is one of the most beautiful places in the world to me — half of my childhood memories, and memories from after I got married, are from the north. The smell of garlic, grilled fish, rice that always sticks together because of the humidity, the sea, the town’s bitter oranges, and the sound of the waves — it’s all etched into my memory.

Traditional zeytoon parvardeh is made with a special Gilani herb called choochagh. If you can get your hands on it, use it instead of thyme.

Zeytoon Parvardeh (Marinated Olives)

A walnut-and-pomegranate marinated olive relish that brings back all my memories of northern Iran.

Ingredients

  • 500 g pitted olives
  • 2 cloves garlic
  • 1/2 tbsp dried mint
  • 1 tsp thyme
  • 250-300 g finely chopped or ground walnuts
  • 2 tbsp olive oil
  • 1/2 cup pomegranate paste
  • 1 tbsp sour plum paste
  • 2 tsp pomegranate juice or lime juice
  • to taste golpar
  • pomegranate seeds and a few fresh mint leaves, for garnish

Method
 

  1. Once you’ve mixed everything together, refrigerate the bowl so the flavors meld.
  2. If your olives are salty, soak them in water for an hour, then drain — any longer and they’ll lose their flavor.
  3. If your olives are bitter, boil them and discard the water to remove the bitterness.
  4. The more walnut and less pomegranate paste you use, the lighter the final color will be, and vice versa.

زیتون پرورده یادآور خاطرات خوب شماله. شمال ایران مخصوصا منطقه رستمرود برای من یکی از زیباترین مکانهای دنیاست. نیمی از خاطرات کودکی و پس از ازدواج من از شماله. بوی سیر، بوی ماهی کبابی، بوی برنج که هرکاری کنی باز هم بخاطر شدت رطوبت بهم می چسبه. بوی دریا، بوی بهارنارنجهای شهرک و صدای موج دریا همه در ذهنم هک شده.

اصل زیتون پرورده با سبزی خاص گیلانی بنام چوچاق تهیه می شود. اگر به این سبزی دسترسی داشتید از آن بجای آویشن استفاده کنید.

Ingredients
  

مواد اولیه
  • ۵۰۰ گرم زیتون بی هسته
  • ۲ حبه سیر
  • ۱/۲ ق س نعنای خشک
  • ۱ ق چ آویشن
  • ۲۵۰-۳۰۰ گرم گردو ریز خرد شده یا چرخ کرده
  • ۲ ق س روغن زیتون
  • ۱/۲ پیمانه رب انار
  • ۱ ق س رب آلوچه جنگلی
  • ۲ ق چ آب انار یا آبلیمو
  • به میزان دلخواه گلپر
  • دانه های انار و چند برگ نعنای تازه برای تزیین

Method
 

  1. وقتی همه مواد را با هم مخلوط کردید، ظرف را در یخچال بگذارید تا مزه ها با هم مخلوط شوند.
  2. اگر زیتون شما شور بود آنرا بمدت یک ساعت در آب بگذارید و سپس آبکشی کنید. بیشتر از این زمان در آب بماند، مزه اش را از دست می دهد.
  3. اگر زیتون شما تلخ است آنرا بجوشانید آب آنرا خالی کنید تا تلخی آن گرفته شود.
  4. هرچه میزان گردو بیشتر و رب انار کمتر باشد رنگ نهایی روشن تر خواهد بود و برعکس.
